Perfect Apple Pie by Seward Rotary Club Chef, Della Miers of Seward, Nebraska.
5 to 7 tart apples ¾ to 1 cup of sugar
2 T. enriched flour 1 tsp. cinnamon
¼ tsp. nutmeg Dash of salt
Pastry for (2) 9” pies 2 T. butter or margarine
Pare apples and slice thin. Combine sugar, flour, spices and salt. Mix with apples. Line 9-inch pie plate with pastry, fill with apple mixture, dot with butter, adjust top crust, and sprinkle with sugar. Bake 400 degrees 50 minutes or until done.
(Red Hot Apple Pie-omit cinnamon and nutmeg in Perfect Apple Pie. Combine 3T. Red cinnamon candies with sugar, flour and salt.)
Della’s Flaky Crust

2/3 cup Crisco 2 T. melted butter
5 T. cold water 2 T. vinegar
Mix flour and salt. Cut in Crisco and butter until mixture is like coarse crumbs. Add water and vinegar. Mixing with fork, form into balls and chill. Roll out to form two crusts. This is fool proof.
